Tooke Ratatouille With Tilapia on Skin and Tomato Salsa PDF Print E-mail

METHOD

TOOKE RATATOUILLE

  1. Cut all the vegetables together into cubes and pan fry until golden brown.
  2. Add in turmeric and salt to taste and cook for 5 – 7 minutes.
  3. Remove and set aside.
  4. Boil water in a pan and remove from heat.
  5. Pour water into a bowl and add the instant Tooke flour, mix thoroughly.
  6. Add all the cooked vegetables and mix well. Add a little salt for seasoning and set aside.

TILAPIA ON SKIN

  1. Fillet tilapia (fish) with its skin and season with pepper and salt.
  2. Heat the butter and shallow fry the fish till golden brown. Skin should not burn or stick on pan.

TOMATO SALSA

  1. Cut up the tomato, onion and carrots into small cubes.
  2. Heat fat in a pan and fry till soft.

SERVING

Serve with Tooke ratatouille and tilapia and garnish with lemon and dill.

SERVING HINTS: GARNISH WITH ROSEMARY HERBS, LEEKS, SPRINGS OR ONIONS
