METHOD

CREAMED LAYER

  1. Pre - heat the oven at 180oC.
  2. Cream sugar and margarine until light and fluffy in a mixer. Add the lemon rind and beaten eggs gradually.
  3. Sift the flours, baking powder and salt, then fold into the creamed mixture.
  4. Spoon he mixture into 6 greased ramekin dishes.
  5. Slice banana and arrange them over the mixture.

RUBBED IN LAYER

  1. Mix RTF, wheat flour and cinnamon together and sieve.
  2. Add the margarine; rub in until the mixture resembles bread crumbs. Add the sugar and mix well.
  3. Spoon the rubbed in mixture over the sliced banana in the ramekin dishes.
  4. Bake for 20 - 25 minutes.

SAUCE

  1. Mix the sugar, water and cinnamon sticks in a small sauce pan and stir until the mixture boils.
  2. Reduce the heat and simmer for about five minutes or until the sugar dissolves.
  3. Add the jam and stir until it dissolves.
  4. Simmer for another 5 - 10 minutes then remove from heat and allow them to cool for 5 - 10 minutes.
  5. Add the brandy and stir well.
  6. Strain the mixture to remove the cinnamon sticks.

SERVING HINTS:   REMOVE THE CAKES FROM THE RAMEKIN DISHES AND PLACE THEM ON A WHITE SIDE PLATE. SPOON THE SAUCE AROUND EACH CAKE, SO THAT THE CAKE IS LIKE AN ISLAND. GARNISH CAKE WITH MINT LEAF AND BANANA SLICES THAT HAVE BEEN DIPPED IN LEMON JUICE
