METHOD

TOOKE CHERRY CAKE

  1. Whisk the eggs, sugar and vanilla together.
  2. Add the RTF, baking powder and milk to the above mixture and continue to whisk till smooth.
  3. Add the melted butter and continue whisking.
  4. Pour the mixture into open greased tart tins and top with halved black cherries.
  5. Bake for 40 minutes at 15oC and cool on a wire rack

VANILLA SAUCE

  1. Bring the milk to boil and add sugar to it while stirring, reduce the heat.
  2. Mix corn flour with a little cold water to form a paste and add it to the simmering milk.
  3. Keep stirring till smooth and thick.
  4. Add the vanilla extract and stir, leave to cook for 5 minutes.
  5. Serve hot or warm with the Tooke cherry cake.
